For 34 years, Patrick Duler has supplied his own restaurant, as well as Michelin starred restaurants and all his faithful clients with wonderful products straight from his farm. The farm produces a range of natural and healthy products: organic vegetables, foie gras, ham from Gascony pigs, truffles, herbs, and more recently olives and wines from his olive trees and vines.

Exceptional ham matured with the wine in the wine cellar
Patrick has worked tirelessly on perfecting his ham and how it evolves, little by little, his unique method has come together. His special way of maturing-drying-aging the ham in the cellar won him the title of the “best ham in the world” during a blind tasting in Barcelona against the most famous Spanish hams. Today his ham like the rest of his artisanal produce are found in some of the best restaurants around the world.
Vines and truffles in perfect harmony
The organic vineyard is co-planted with truffle oak trees and wheat; the wheat acts like a semi-wild crop within the vineyard. The idea behind this revolutionary idea is to limit the illness in the vineyard and to maintain the “zero treatment” philosophy like the rest of the estate.
With the help of his vigneron fiends, Patrick Duler leads this innovative project with Francis Laffargue, director of the local Experimental Farm, and Elisabeth Besnard, oenologist with a Ph.D. in soil science.
Unique wines made with over 30 varieties The wines will come from 2 plots planted in 2014:
One of the plots is planted with 17 white varieties: Mauzac, Len de L’el, Chardonnay, Clairette, Chenin, Terret blanc, Viognier, Vermentino, Montils, Petit Manseng, Macabeu, Sauvignon blanc, Ugni blanc...
The second plot is planted with 14 red varieties: Cot (Malbec), Syrah, Cinsaut, Abouriou, Marselan, Niellucio, Gamay, Pinot noir, Merlot, Grenache noir, Carcagolo noir, Cabernet Sauvignon...
WHAT WILL THE FUNDS BE USED FOR?
At the heart of the project is the cellar: the marriage between wine and ham.
The cellar will be used to age the wine and mature Patrick’s exceptional hams.
Why mix the two? Wine and ham are both the product of fermentation. After five years perfecting his method of maturing his hams in passionate winemakers’ cellars, Patrick wants to do it himself in his own cellar.
The targets:
The minimum objective for this project is 30,000€: this will be used to help finish the cellar used for the wines and hams. The cellar will be partially buried, in stone, with a vault built to respect the local tradition. A team of local artisans will realize this large project.
The second objective is 50,000€: this will be used to finance the Earth-Air Heat Exchanger, or puits Canadian, which naturally regulates the room temperature.
The third objective is 70,000€: this will be used to expand the solar panel park and improve the ecological vinification process.
The fourth objective is 100,000€: this will be used to buy oak barrels for the wines.
The final objective is 200,000€: this will be used to finance the construction of an underground vinification cellar to receive the harvest, sort the grapes and ferment in the best conditions both the red and white wines at a constant temperature.
Just like wines aged for a long time, maturing hams for between 30 and 50 months mobilizes a significant amount of stock. That’s the price to pay to profit from these exceptional products! The traditional financial services rarely finance these types of projects. That is why we need your help!
